How to Make Ayam KFC Ala Oji (Bonus: Ayam Geprek Recipe)

Yuhuu, after a thousand years craving of ayam KFC, I am feeling super happy knowing how to make ayam KFC homemade taught by chef Oji so I do not need to whine to my father anymore how frustrated I am without ayam KFC. One clap may not be enough to show my gratitude to him, so let's give him a round of applause. I know guys, you come here because you also want to know how to make it, right? So, without further ado, check this out!

1. Chicken

2. Cloves (you have to crush this first)

3. Star Anise (you have to crush this first)

4. Oregano, garlic, paprika, coriander powder

5. Nutmeg powder, black pepper, white pepper powder

6. Wheat flour

7. Cornstarch

8. All Spice

9. Chicken broth powder

10. Salt

11. Coconut Oil/any kinds of vegetable oil

1. Prepare 2 plates, one for the dry dough and one for the wet dough. Into each plate, put the wheat flour and a small amount of cornstarch. Don't put too much cornstarch because it can damage the formation of the crispy-ness.

2. Each dough, please put the powder of the cloves, star anise, oregano, garlic, paprika, coriander, nutmeg, black pepper, white pepper, all spice, and chicken broth powder. The amount is as much as your taste. However, from the experience, you should add much powder of cloves, star anise, and pepper to make the taste stronger and unique.

3. Do not forget to add salt. Please be careful not to put it too much or it will become salty.

4. Add enough water to one plate only and mix it well. Mix also the dry powder.

5. Prepare the chicken and cut it into pieces as you want. After washing, put the chicken firstly into the wet dough.

6. Secondly, put it into the dry dough. Pinch it well.

7. Prepare the hot oil, wait until it's hot enough, put the floured chicken, and set the fire to its low level. Please notice that if you want to run another batch for the chicken, before putting it into the oil, you have to increase the level of the fire into its highest, for several seconds, put it back to its lowest level, then you can deep-fry it into the hot oil.

8. Now, your homemade ayam KFC is ready to be served. Enjoy!


As I promised, below is ayam geprek recipe as the bonus. The ingredient is very simple, you just need ayam KFC, shallots, garlic, red chilies, salt, and sugar. If you want, you can add shrimp paste and tomato.

The procedure:
1. Prepare the ingredient (shallots, garlic, red chilies (tomato and shrimp paste if you want). I prefer to use this brand for red chilies, so I do not need to cut it into pieces (what a technology!).

2. Fry it in the hot oil, wait until well cooked.

3. Take it out and mash it softly. Do not forget to add salt and sugar as your taste.

4. Put ayam KFC into the mixture and crush it.

5. So easy right? Now, ayam Geprek KFC is ready!
